Abstract

Les châtaigniers sont cultivés depuis des siècles en Europe. Les pays montagneux du sud sont traditionnellement les plus gros producteurs de châtaignes en Europe. Bien que restant une culture marginale, plusieurs industries de châtaignes se sont récemment développées avec succès dans des zones moins accidentés. Les châtaignes sont des espèces de haute importance économique. Le châtaignier européen (Castanea sativa) est originaire du sud de l'Europe, d'Asie et d'Afrique du Nord. Son large houppier peut atteindre une hauteur de 30 m et plus au cours de ses 250 à 500 ans. Le châtaignier du Japon (C. crenata) est un arbre qui a été introduit en Europe en raison de sa résistance à la rouille du châtaignier. Les hybrides euro-japonais ont été sélectionnés pour leur excellente qualité de noix. Les châtaignes sont riches en glucides et en sucre tout en étant faibles en graisses. Ses qualités nutritives et son goût très apprécié font de la châtaigne un produit recherché par les consommateurs. La plupart des noix produites sont directement consommées fraîches, rôties, frites ou bouillies. Il existe également plusieurs produits transformés à valeur ajoutée. Par exemple, certaines variétés sont utilisées pour fabriquer de la farine de châtaigne sans gluten. Le bois de châtaignier est très apprécié pour sa couleur, sa durabilité, et sa facilité de travail. Il est très utilisé pour faire des poteaux extérieurs, des meubles et des revêtements de sol. La richesse en tanins de ce bois le rend très résistant à l'épreuve du temps.
