Aplicación de la genética para mejorar la calidad de la leche

Abstract

Beta-caseína (β-Cas), kappa-caseína (κ-Cas) y beta-lacto globulina (β-Lac) son proteínas de la leche que tienen importantes implicaciones a nivel de calidad, producción y para la salud de los seres humanos. Concerniente a β-Cas, en la digestión y producción de derivados de leche con β-Cas A1 se libera Beta-casomorfina-7 (BCM-7) (Fig.2). Se ha demostrado que el consumo de leche que contiene BCM-7 causa la inflamación del tracto gastrointestinal (1) por lo que es recomendable consumir leche A2 (Fig.3). La κ-Cas está relacionada con la formación de micelas, la leche que contiene leche con κ-Cas BB presenta una coagulación más rápida y firme, lo que aumenta la producción de queso un 10% (2,3). Con respecto β-Lac, las vacas que tiene el genotipo BB producen leche con bajo contenido de beta β-Lac. Ha sido establecido que la β-Lac produce alergia en los humanos. Además la leche que tiene bajo contenido de β-Lac, tiene un alto contenido de caseínas y otras proteínas que son importantes en la producción de queso (2,3). En este trabajo caracterizamos a nivel genético un rebaño de vacas Jersey y determinamos la frecuencia alélica de los genes para β-Cas, κ-Cas y β-Lac con el objetivo de mejorar en el futuro la calidad de leche según las exigencias del productor (queso o leche de consumo).
