Abstract

Durante casi todo el siglo XX, pero muy especialmente a lo largo de su segunda mitad, las transformaciones en el terreno alimentario se han sucedido progresivamente de manera cada vez más acelerada. En sociedades con mayor nivel de desarrollo socio económico, mercados bien abastecidos de productos alimenticios han implicado, en términos generales, disponer de una mayor producción y distribución de productos a nivel industrial y un acceso más fluido a buena parte de la comida a precios mucho más asequibles. Pero por otro lado, dicha producción, más industrializada y masificada, se ha visto afectada en una doble vía: tanto por varios problemas de tipo sanitario (enfermedades, infecciones, etc.) asociados a su producción como, en consecuencia, por una cada vez mayor desconfianza de la población en relación con los alimentos que consumen.
