This entry contains the dataset discussed in the manuscript "Crystallization kinetics in industrial fats: the effect of substituting stearic for palmitic acid in fats containing lauric acid" by the same authors. The ZIP-files contain processed SAXS/WAXS data (intensity versus scattering vector) after subtraction of the background available as .dat, and additionally, after subtraction of the amorphous phase (indicated by "rolling ball") available as .dat and .nxs. The differential scanning calorimetry data are given as collected. The data obtained during crystallization were additionally treated by subtracting the signal of canola oil.
