Abstract

Mevalarning hosil yig‘im-terimidan keyingi davrda mikrobiologik buzilishi oziq-ovqat xavfsizligi va mahsulot sifatining pasayishiga olib keluvchi muhim muammolardan biri hisoblanadi. Ayniqsa olma, nok va uzum kabi yuqori namlik hamda ozuqaviy moddalarga boy mevalar turli xil zamburug‘ va bakteriyalar rivojlanishi uchun qulay substrat vazifasini bajaradi. Ushbu tadqiqotning maqsadi olma, nok va uzum mevalarida uchraydigan asosiy chirish chaqiruvchi mikroorganizmlarni tahlil qilish hamda antagonist bakteriyalarning biologik nazoratdagi ahamiyatini baholashdan iborat.
