Abstract

The dataset provides an overview on experiments in lab scale for the production of mushroom protein from discarded mushrooms and mushroom stems of L. Edodes using isoelectric point (pI) within the LIKE A PRO project. All the paremeters evaluated to obtain the maximum content of protein are shown in the file.
