Hvorfor ryger madpakken i skraldespanden

Abstract

Danmark skal i gang med sin anden større forsøgsordning omkring skolemad og det kan blive til en af de største revolutioner i børn og unges madkultur. Og måske kan det lede til nogle nye veje, når det gælder om at tackle nogle af de udfordringer vi har omkring bæredygtighed og ernæring i de unge år. Vi ved allerede at indtaget af ultra forarbejdede fødevarer er alt for højt, op mod 20% af børn og unge er enten fede eller overvægtige. Kun 12 % af de danske skoleelever er involveret i at tilberede deres egen madpakke, og kun halvdelen af skoleeleverne føler sig mætte efter deres skolefrokost (dansk NGO i 20171). Dertil kommer at undersøgelse viser at omkring 26 millioner madpakker smides ud om året i Danmark.2 Der er med andre ord nok gå i gang med når det gælder den læring om maddannelse som skolen kan bidrage med. På Københavns Universitet har vi som en del EU-CHORIZO-projektet haft mulighed for at interviewe børn, lærere, forældre og skoleledere for at forstå mere om hvad børn tænker om spisning i skolen og ikke mindst deres tanker om madspild i børnehøjde.
