As a member of the consortium and leader of WP7, one of Deoleo's tasks is to promote sustainable practices among farmers and oil mills. To this end, it has developed a sustainability protocol that has been presented in various training sessions.This protocol highlights the importance of sustainable practices for improving soil health and sustainable olive oil production.The practices are applicable to olive groves and/or oil mills and cover various environmental, social, economic and quality aspects. In total, it includes 235 actions with different levels of requirement and scope and is intended to be a tool for the dissemination and application of sustainable practices in oil mills and olive groves.The protocol is structured into eight blocks or thematic areas, and its implementation is verified by a third party.
