
Poster presented at the International Congress of Meat Science and Technology; 2025.08.03-08 This study investigates the use of MALDI-ToF-MS fingerprinting as a rapid, cost-effective, and sensitive screening method for detecting pork adulteration in beef patties. The approach evaluates the accuracy and precision of MALDI-ToF-MS for reliable identification of adulterated samples based on peptide profile analysis. Results demonstrate that MALDI-ToF-MS provides a fast and reproducible analysis of raw meat, with strong predictive performance on the test dataset (Q² = 0.84, low RM PRESS).
