Abstract

A palma forrageira é uma cultura de grande importância para as regiões áridas e semiáridas do Brasil e do mundo, principalmente, em função de sua rusticidade e elevada adaptação a condições de déficit hídrico. O presente trabalho teve como objetivo analisar o potencial da palma forrageira para uso na alimentação humana, com ênfase em seus aspectos nutricionais e possibilidades de aplicação culinária. O estudo foi conduzido por meio de revisão bibliográfica narrativa, com base em artigos científicos, que abordam a composição química, os compostos bioativos e o uso alimentar da palma forrageira. Os resultados indicam que os cladódios jovens e os frutos apresentam elevado teor de água, fibras, vitaminas, minerais e metabólitos secundários, além de potencial antioxidante, podendo ser incorporados a diferentes preparações alimentícias, como pães, geleias, bolos e derivados lácteos. Conclui-se que a inserção da palma forrageira na alimentação humana constitui uma alternativa viável para a diversificação alimentar, melhoria do valor nutricional da dieta e fortalecimento da segurança alimentar, especialmente em regiões semiáridas.

The forage cactus is a crop of great importance for arid and semi-arid regions of Brazil and other parts of the world, mainly due to its rusticity and high adaptation to water deficit conditions. This study aimed to analyze the potential of forage cactus for human consumption, with emphasis on its nutritional aspects and culinary applications. The study was conducted through a narrative bibliographic review, based on scientific articles addressing the chemical composition, bioactive compounds, and food uses of forage cactus. The results indicate that young cladodes and fruits present high contents of water, dietary fiber, vitamins, minerals, and secondary metabolites, in addition to antioxidant potential, allowing their incorporation into different food preparations such as breads, jams, cakes, and dairy products. It is concluded that the inclusion of forage cactus in human diets represents a viable alternative for food diversification, improvement of nutritional quality, and strengthening of food security, especially in semi-arid regions.
