Vývoj přípravku na bázi chitosanu pro biologickou stabilitu nízkoalkoholických a nealkoholických piv

Abstract

Projekt TAČR TQ03000474 Cı́lem projektu bylo prostřednictvı́m spolupráce EPS biotechnology a Ústavu biotechnologie VŠCHT Praha vyvinout přı́pravek na bázi chitosanu, který by primárně zvyšoval biologickou, sekundárně pak fyzikálně-chemickou stabilitu nı́zkoalkoholických a nealkoholických piv. Výsledkem projektu bude dosaženı́ funkčnı́ho vzorku popisujı́cı́ho vyvinutý preparát a dvou ověřených technologiı́, které budou popisovat postup výroby preparátu a jeho aplikaci. Dosažené výsledky cı́lı́ na produkčnı́ sektor minipivovarů. Projekt reflektuje absenci obdobného přı́pravku na tuzemském trhu a současně na trend zvyšujı́cı́ se spotřebitelské poptávky po nealkoholických pivech (evropský i světový trh). Projektová náplň vychází z poznatků a informací uvedených v odborné literatuře. Zde jsou uloženy datové soubory z analýz provedených na Ústavu biotechnologie VŠCHT Praha.
