Abstract

This upload contains underlying data for figures 2-6 in the paper "Nanoscale conformations of casein micelles and pectins in composite food systems" by Mishra et. al. All AFM data are topography scans, stored as .txt files readable by most data processing platforms such as Matlab. The are structurted according to the scanned system: Casein: AFM scans of casein micelles only, as described Materials and Methods. Pectin: AFM scans of HMP and LMP Pectin only, as described Materials and Methods. Casein-Pectin: AFM scans of mixed Casein+Pectin systems, as described in Materials and Methods.
