Abstract

Solo entre el 20 % y 30 % de la biomasa del banano es utilizada; el resto, incluyendo las cáscaras, se desechan, provocando contaminación. Sin embargo, las cáscaras, contienen compuestos bioactivos valiosos. El objetivo fue determinar la composición química y la actividad antioxidante de las cáscaras de Musa paradisiaca L. aplicando métodos fisicoquímicos y químicos, para el aprovechamiento de estos residuos. Para el grado de maduración 1 de la especie, se cuantificó el contenido de humedad residual, cenizas, fibra cruda, grasas y proteínas. Se identificó al potasio como el mineral presente en mayor proporción en las cáscaras analizadas. El elevado contenido de potasio, con los valores de 6,130 % y 6,735 % para proteínas y fibras respectivamente y el bajo contenido en grasas (0,109 g), lo colocan como una materia prima promisoria para la elaboración de alimentos funcionales y/o suplementos nutricionales. Se identificaron glicósidos de kaemferol, quercetina e isorhamnetina por CLAE/EM/UV. Se cuantificaron 4,0 mg EAG de fenoles y 2,48 mg EAG de taninos por 1 g de droga. La actividad antioxidante, por DPPH y FRAP, mostraron 2,045 y 1,98 mg ET en 1 g de droga, respectivamente. Los resultados obtenidos demuestran el gran potencial que poseen estas cáscaras.
