Innovación y desarrollo empresarial en los restaurantes de lima: un análisis con modelo de ecuaciones estructurales

Abstract

Resumen El presente estudio analiza la asociación entre innovación y desarrollo empresarial en restaurantes en Lima Metropolitana. Se utilizó un diseño de estudio cuantitativo, no experimental, transversal y exploratorio. Para ello, se recogieron mediante cuestionarios validados los datos de 228 trabajadores administrativos y se seleccionó una muestra por conveniencia. Las variables que estudia el presente trabajo incluyen: la innovación en productos, procesos, mercadotecnia, y organización. El análisis se ejecutó mediante un modelo de ecuaciones estructurales basados en suposiciones mínimas cuadradas parciales o PLS-SEM con el paquete de software SmartPLS 3. Los resultados confirman que la innovación en productos y procesos influye significativamente en la innovación empresarial, mientras que la mercadotecnia y organización no alcanzan significancia estadística. Asimismo, se considera que la innovación empresarial puede mejorar el desarrollo empresarial. Este hallazgo pone de manifiesto la importancia de dar prioridad a estrategias de innovación en sectores altamente competitivos como lo es el gastronómico en Lima.

Abstract This study analyzes the association between innovation and business development in restaurants in Metropolitan Lima. A quantitative, non-experimental, cross-sectional and exploratory study design was used. For this purpose, validated questionnaires were used to collect data from 228 administrative workers and a convenience sample was selected. The variables studied in this study include: innovation in products, processes, marketing, and organization. The analysis was performed using a structural equation model based on partial least squares assumptions or PLS-SEM with the SmartPLS 3 software package. The results confirm that product and process innovation significantly influence business innovation, while marketing and organization do not reach statistical significance. Furthermore, it is considered that business innovation can improve business development. This finding highlights the importance of prioritizing innovation strategies in highly competitive sectors such as the gastronomy sector in Lima.
