Abstract

Este estudio evaluó la factibilidad de sustituir parcialmente la harina de trigo por harina de mote (Zea mays) en la elaboración de pasta, adicionando albahaca deshidratada y extracto de espinaca para enriquecer su valor nutricional. El objetivo principal fue determinar la proporción óptima de sustitución que resultara en un producto con alta calidad sensorial y nutricional, a la vez que fuera bien aceptado por los consumidores. Se elaboraron diferentes formulaciones de pasta y se sometieron a pruebas sensoriales con un panel de 30 jueces, quienes evaluaron atributos como textura, color, aroma, sabor y aceptabilidad general. Complementariamente, se realizaron análisis bromatológicos y microbiológicos para garantizar la calidad e inocuidad del producto. Los resultados revelaron que la pasta con 60% de harina de mote y 40% de harina de trigo presentó el mejor balance entre características sensoriales y nutricionales. Esta formulación no solo obtuvo la mayor aceptación por parte de los consumidores, sino que también destacó por su mayor contenido de hierro y la ausencia de gluten, convirtiéndola en una alternativa saludable y apta para personas con intolerancia al gluten. El estudio concluye que la incorporación de harina de mote en la elaboración de pasta ofrece una opción nutritiva y viable para diversificar la alimentación.
