Abstract

El kéfir es una bebida probiótica fermentada proveniente de la bioactividad simbiótica de microorganismos reconocidos como seguros. La acción que aporta esta bebida es mediante la diversidad de beneficios nutricionales, antiinflamatoria, gastrointestinales, antimicrobianos entre otras. En el Ecuador, existe poco aprovechamiento de productos biotecnológicos con valores agregados. El objetivo de este estudio consistió en evaluar la bebida probiótica en adultos mayores de la Ciudadela Las Piñas, de la ciudad de Milagro. Fueron 126 adultos mayores que ayudaron con la actividad sensorial de la bebida de kéfir de agua, datos que permitieron observar el impacto de aceptación, dichos parámetros organolépticos tuvieron el 3% con un pico máximo de 4% considerándolo como muy bueno dentro de los rangos de consumo, el mejor tratamiento de ingesta de kéfir fue 2 veces por semana con un rango máximo de aceptación de 4.5%. En la mejora de la digestión y regulación en problemas de estreñimiento de los participantes, mostraron un mejor estado en la digestión a partir de la semana 2 con un 2.5%, hasta alcanzar la semana 6 con resultados del 9%, considerando el pico máximo 10% en el equilibrio del microbiota intestinal y mejoras en la salud intestinal.
