Abstract

La p?che et la transformation du poisson occupent une place importante dans l??conomie et l?alimentation au S?n?gal. La production halieutique nationale totale a atteint 509 215,7 tonnes en 2016 (DPM, 2016). L?essentiel des captures provient de la p?che artisanale maritime (94,7%). Cette revue fait un ?tat des lieux de la p?che au S?n?gal (maritime, continentale et aquacole) entre 2012 ? 2016. Elle ?tudie les moyens, techniques et caract?ristiques des d?barquements. La conservation des produits d?barqu?s constitue un probl?me majeur du fait d?un manque d?infrastructures ad?quates. Ces contraintes entra?nent des pertes estim?es ? 25%. La transformation traditionnelle contribue ? la limitation des pertes post-captures. Elle permet la diversification des aliments sources de prot?ines animales. Le guedj, poisson ferment? sal? et s?ch? fait partie des plus populaires pour sa flaveur et la valeur ?conomique g?n?r?e. Comme le lanhouin du B?nin et l?adjuevan de la C?te d?Ivoire, le guedj est utilis? comme condiments et source de prot?ines dans plusieurs mets au S?n?gal et consomm? par presque toutes les populations. Cependant, une fermentation traditionnelle spontan?e combin?e ? un salage excessif affecte la qualit? microbiologique et organoleptique du produit. Des recherches sur le syst?me de production et d?optimisation de la fermentation par utilisation de bact?ries lactiques et une source externe de sucres comme la farine de mil malt?e ont ?t? initi?es. Le d?veloppement des recherches va permettre la mise au point d?un starter capable de faire baisser le pH en vue d?un contr?le plus efficace des microorganismes pathog?nes.
