Los agaves del sur y sus fructanos

Abstract

Los agaves acumulan energía a lo largo de su vida, la cual utilizarán para florecer y reproducirse. La manera como los agaves acumulan la energía es sintetizando moléculas complejas llamadas fructanos, cadenas de fructosas unidas por enlaces químicos. Los fructanos del agave se pueden recuperar empleando distintos procesos mecánicos y físicos, de tal manera que los podemos extraer de las plantas, purificar y secar para tener un polvo soluble en agua. Este polvo de fructanos puede servir para la salud intestinal de los humanos y animales dado que se considera como fibra dietética soluble, indispensable para la salud digestiva. En este texto explicaremos cuáles variedades de agaves encontramos en el sur de México, qué procesos podemos usar para extraer los fructanos de estos agaves y, finalmente, mostraremos algunas características químicas estructurales de los fructanos extraídos de agaves de Guerrero, Oaxaca y Chiapas. Se colectaron muestras de Agave angustifolia, Agave americana, Agave potatorum, Agave cupreata de los estados de Guerrero, Chiapas y Oaxaca. Se realizó la extracción de azúcares solubles en agua y posteriormente se realizó la caracterización de los azúcares extraídos utilizando metodología de HPLC-SEC. Se observó que el grado de polimerización (GP) promedio osciló entre 8.15 y 21.80. En las muestras analizadas se detectaron porcentajes de fructooligosacáridos (FOS) que oscilaron entre 12 y 78%. Se observó que los azúcares libres son mayoritariamente fructosa (40-80%), seguido de sacarosa (3 - 40%) y glucosa (3-30%). Los agaves del sur muestreados en este proyecto mostraron potencial para obtener de ellos fibras solubles o agavinas mostrando diversidad en el GP y contenido de azúcares libres, encontrando que se pueden obtener productos diferenciados pero también productos similares de los fructanos comerciales de Agave tequilana.
