Innovation Product: Diversifying the Usage of Waste Ingredient in Popia Skin

Abstract

Frozen popia with treated banana skin, known as Banana Skin Popis with Honey Sambal Tumis, is aninnovative product that differentiates itself from existing popia in the market. The main purpose of this innovationis to diversify and enrich the use of waste ingredients in the making of popia skins. Marketing and commercializingthis new frozen popia can increase the value of local waste ingredients by incorporating them into the popia skin.Banana Skin Popis with Honey Sambal Tumis is designed to meet current consumer demand by providing aconvenient option that can be reheated in a microwave oven or deep fryer in less than one minute. This product ismarketable, cost-effective, and easy to prepare, making it suitable for mass production. Simplifying the preparationmethod and extending shelf life were key goals in developing this product. Using treated methods and ingredients(such as food-grade preservatives) can enhance both the taste and shelf life of the product. Before the filling isprepared, treated homemade popia skins are made by soaking banana skins in brine water. The ingredients are thenaccurately weighed, mixed, and pan-fried to make the popia skin. The filling is prepared by cooking vegetables withhoney sambal. The sambal is spread evenly on the popia skins, then pre-cooked for a few seconds, cooled, placed inairtight containers, and stored at freezer temperature. A paired comparison test (n = 100) using acceptance scales(the most and least indicator) based on coded samples with two different variations (V1 & V2) assessed six attributes:color, appearance, crispiness, oil uptake, flavor, and overall acceptance. The results indicated that Banana Skin Popiswith Honey Sambal Tumis (V2) was preferred by 80 panelists, compared to 20 panelists for Banana Skin Popis withPlain Sambal Tumis (V1).
