
The Role of Personal Values and Situational Context in the Meat Consumption Behaviour of Urban Dutch Consumers: Meat production is a significant contributor to environmental degradation. Yet, despite widespread environment concerns, many individuals do not engage in sustainable protein consumption, reflecting a value-behaviour gap. Empirical data from an Ecological Momentary Assessment were used to conduct an econometric analysis and develop a data-driven Agent-Based Model that incorporates a comprehensive picture of the various dimensions of (urban) situational contexts during meal episodes. This model explores how personal values, situational context, and their interplay, influence the likelihood of consuming meat among the urban population in the Netherlands.
