Abstract

Markmið verkefnisins „Hámörkun gæða frosinna makrílafurða“ er að rannsaka gæði og stöðugleika makrílafurða í frosti eftir árstíðum og áhrif mismunandi forkælingar, frystingar og geymsluaðstæðna. Með því að skoða samspil þessara þátta er hægt að hámarka gæði og nýtingu makríls og því um leið verðmæti hans. Þetta er fyrsta skýrslan úr verkefninu og fjallar hún um áhrif hitastigsveiflna við geymslu og flutning á gæði og stöðugleika frystra makrílafurða. Matsþættir voru m.a. los, ensímvirkni og þránun. Hermdir voru gámaflutningar til Japans. Heilfryst hráefni sem veitt var í lok júlí og byrjun september var fryst og geymt við -25 °C í einn mánuð. Við „flutning“ var afurðin sett í geymslu við -18 °C ±5 °C í einn mánuð. Sýnin voru mæld fyrir frystingu, eftir „flutninginn“, og eftir það á 3ja mánaða fresti í geymslu við -25 °C. Til samanburðar voru sýni geymd við stöðugt hitastig (-25 °C). Þessu til viðbótar voru heilfrystar makrílafurðir geymdar í allt að 12 mánuði við -18 °C sem og -15 °C til þess að leggja mat á áhrif mismunandi geymsluaðstæðna. Greinilegur munur var á gæðum og stöðugleika frosinna makrílafurða sem voru geymdar við lágt og stöðugt hitastig samanborið við afurðir sem urðu fyrir hitaálagi t.d. vegna gámaflutnings. Niðurstöðurnar sýna að ekki ætti að geyma makríl við hærra hitastig en -25 °C. _____The aim of the project “Quality optimization of frozen mackerel products” is to study the quality and stability of mackerel products during frozen storage as affected by season, different pre-cooling methods, freezing techniques and storage conditions. This is the first report from the project and describes the effects of temperature fluctuations during storage and transportations on quality and stability of frozen mackerel products. The main attributes investigated were e.g. gaping, enzymatic activity and rancidity. Container shipment were simulated. Whole mackerel caught late July and early September was frozen and stored at -25 °C for one month. During “transportation”, the products was heat abused at -18 °C ±5 °C for one month. Samples were analysed after freezing, the transportation and with 3 months interval during subsequent storage at -25 °C. For comparison, samples were stored at stable temperature (-25 °C). Additionally, frozen mackerel products were stored for up to 12 months at -18 °C and -15 °C to evaluate further the effects of storage temperature. A significant difference in quality and stability were detected between products stored at stable and low temperature and products that underwent heat abuse during e.g. transportation. The results demonstrates that frozen mackerel products should not be stored at higher temperature than -25 °C.
