Abstract

The overall aim of the AVS project, “Saltfiskur til framtíðar” is increased value creation in fish processing industry by developing and optimising processes for fully salt-cured cod, as compared with current process. The objective of the work described in this report was to develop and optimise a methodology of desalting fully salt-cured cod with regard to quality, yield and streamlining the desalting process. Different parameters were evaluated during four desalting trials; e.g., evaluation of the quantity of water needed, time needed the desalting, optimal time points for water change, with sensory evaluation, yield, salt content and efficiency of desalting. OFIEL, Bacalao soaking device for measuring the degree of desalting, was tested for practical use during desalting. OFIEL device testing showed the device provided the required information about the end of desalting. However, it was not very practical in use. Water movement during desalting was somewhat more efficient regarding desalting rate but decreased yield, as compared to desalting in water without movement. Continuous water flow was more efficient (with same quantity of water used) as the desalting time was shortened by 24%. Where space available for the desalting process is limited, the best ratio of fish to water was 1:3 (w/v) with changes of water through the desalting process, but timepoints of water change were crucial, regarding overall desalting time, sample quality and yield. Further, the results showed that monitoring different parameters (colour, texture, density), could bring new opportunities to the industry to estimate salt content in samples more quickly. The next steps will therefore aim at developing a model to follow the desalting using parameters that may predict the progress of desalting in a faster manner than measuring the salt content in fillets._____ Markmið AVS verkefnisins “Saltfiskur til framtíðar” var að stuðla að virðisaukningu í fiskiðnaði með því að þróa og besta ferla fyrir fullsaltaðan og staðinn þorsk, í samanburði við núverandi ferla. Tilgangur þeirra tilrauna sem lýst er í þessari skýrslu var að þróa og besta aðferðir við útvötnun á fullsöltuðum og stöðnum þorski hvað varðar gæði, nýtingu og hagkvæmni í útvötnunarferlinu. Mismunandi þættir voru metnir í fjórum útvötnunartilraunum; t.d. mat á því vatnsmagni sem þarf, tíma sem þarf til útvötnunar, tímasetningar vatnsskipta, með skynmati, nýtingu, saltmælingum og skilvirkni útvötnunarinnar. OFIEL mælir sem áætlaður er til að mæla hversu mikið flökin hafa verið útvötnuð, var prófaður til að kanna hvort hægt væri að nýta slíkan mæli við eftirlit með útvötnun. Prófanir með OFIEL mæli sýndu að mælirinn sýndi upplýsingar um lok útvötnunar, en var ekki handhægur í notkun. Hreyfing vatns við útvötnun var heldur hagkvæmari hvað varðar hraða útvötnunar, en minnkaði nýtingu samanborðið við útvötnun án hreyfingar vatns. Stöðugt vatnsrennsli var skilvirkara (með sama heildarmagni af vatni sem notað var í öðrum tilraunum) þar sem útvötnunartíminn styttist um 24%. Þar sem tiltækt pláss fyrir útvötnun er takmarkandi þáttur, var besta hlutfallið milli fisks og vatns 1:3 (w/v) með vatnsskiptum í útvötnunarferlinu, en tímasetningar vatnsskipta höfðu mikil áhrif á heildar útvötnunartíma, gæði og nýtingu. Niðurstöðurnar tilraunanna sýndu að mælingar ólíkra gæðaþátta (litur, áferð, þéttleiki) gætu nýst til að meta meta saltinnihald í sýnum hraðar. Næstu skref munu því miða að því að þróa líkan til að fylgja afsöltuninni með breytum sem geta sagt fyrir um framvindu afsöltunar á hraðari hátt en að mæla saltinnihald í flökum.
