РАЗРАБОТКА РЕЦЕПТУРЫ ЙОГУРТА НА ОСНОВЕ ПОРОШКА СТЕВИИ КАК ФУНКЦИОНАЛЬНОГО НАЗНАЧЕНИЯ

Abstract

Йогурты - это молочный продукт, ферментированный лактобактериями. Во время переваривании молочного белка эти лактобактерии перерабатывают полезные для организма питательные вещества. Йогурт – считается ценным продуктом среди молочных продуктов. В одном стакане кефира содержится 8 граммов белка, 400 мг кальция, калия и препаратов группы В. В результате деятельности лактобактерии йогурт содержит больше витаминов В12, В3 и А по сравнению с молоком. Йогурт производят с использованием термофильных молочнокислых бактерий [1-3].
