EL POTENCIAL DEL GRILLO ACHETA DOMESTICUS COMO FUENTE PROTEICA SOSTENIBLE PARA EL FUTURO DE LA ALIMENTACION HUMANA

Abstract

Ante la creciente demanda global de proteinas y las presiones ambientales cada vez mayores, la búsqueda de fuentes alimentarias sostenibles y eficientes se ha vuelto esencial. Este estudio presenta una revision exhaustiva sobre la sostenibilidad del grillo Acheta domesticus como una fuente alternativa de proteina para el consumo humano. Se realizo una revision sistematica de la literatura utilizando bases de datos cientificas de alto impacto como PubMed y ScienceDirect, ademas de la biblioteca digital de la UAEH. Los resultados revelan que el Acheta domesticus destaca por su alto contenido proteico, su perfil nutricional favorable, que incluye aminoacidos esenciales, lipidos saludables y micronutrientes, y su bajo impacto ambiental en comparacion con fuentes tradicionales de proteinas animales. Ademas, la produccion de este insecto presenta una eficiencia notable en terminos de recursos y emisiones, posicionandolo como una alternativa prometedora para mejorar la seguridad alimentaria y promover practicas mas sostenibles. Sin embargo, aún existen desafios relacionados con la produccion y aceptacion social de los insectos como alimento, lo que requiere mayores investigaciones y campanas educativas para fomentar su inclusion en la dieta humana. Con el apoyo adecuado y el cambio en las percepciones sociales, los grillos podrian desempenar un papel crucial en la transicion hacia sistemas alimentarios mas sostenibles y equilibrados.
