Abstract

1. Die die Extraktionsgeschwindigkeit loslicher Proteine aus kolloidalen Medien durch wasserige Losungsmittel bestimmenden Krafte sind kapillarer Natur. 2. Die Kapillarkrafte regulieren die Extraktionsgeschwindigkeit nicht dadurch, dass sie die Raschheit bestimmen, mit welcher das Losungsmittel die Kolloidteilchen durchdringt und ihre inneren Oberflachen befeuchtet, sondern dadurch, dass sie die Geschwindigkeit kontrollieren, mit welcher das geloste Protein aus dem Innern der Proteinteilchen in das aussere Losungsmittel ubertritt. 3. Die zwischen dem Betrag (x) des extrahierten Proteins und der Extraktionszeit (t) bestehende Beziehung wird durch die Formelx=Kt m zum Ausdruck gebracht. 4. Aus der Form dieser Beziehung folgt, dass, obwohl die Extraktion des Proteins zu Anfang sehr rasch verlauft, dieselbe innerhalb einer experimentell endlichen Zeit doch nie eigentlich beendet sein konnte. Es wird gezeigt, dass dies mit experimentellen Beobachtungen im Einklang steht.
