Amylopectin internal molecular structure in relation to starch properties

Abstract

Unit chain length distributions of amylopectins and their φ,β-limit dextrins (reflecting amylopectin internal part) from 11 Chinese sweetpotato genotypes were characterized by high performance liquid chromatography. The results showed that the amylopectin internal molecular structure is closely related to starch properties, such as gelatinization temperature and retrogradation rate. The study provides valuable information for understanding the molecular basis of starch properties and for breeding high-quality starch crops.
