Abstract

Resumo: Os objetivos do presente trabalho foram: 1) Estudar a influência das condições ambientais durante o transporte para o desenvolvimento de Aspergillus ochraceus e produção de ocratoxina no café. 2) Levantar dados das condições reais de transporte e validar conteineres protótipos, e 3) Propor medidas preventivas para evitar o aumento da umidade do café dentro dos conteineres. Seis conteineres (três comerciais e três protótipos) foram monitorados durante o transporte do Brasil até a Itália. Os conteineres foram colocados em três diferentes posições (convés, abaixo do convés e porão) no navio. Cada protótipo foi colocado ao lado do conteiner convencional. Dados de temperatura, umidade relativa, condensação e mudanças no conteúdo de umidade dos grãos foram monitorados. O conteiner de café localizado abaixo do convés foi o menos afetado pelas variação em relação ao conteúdo de umidade (0,7%). Os cafés dos conteineres localizados no porão sofreu a maior variação no conteúdo de umidade (3%). Este conteiner apresentou sinais visíveis de condensação. O café transportado no convés teve uma variação da umidade intermediária (2%) e não apresentou uma condensação visível. A variação no conteúdo de umidade dos conteineres protótipos foi similar ao convencional. Houve um aumento na produção de ocratoxina A nos cafés que apresentaram aumento no conteúdo de umidade. O ensaio sobre simulação do transporte estudou a prevenção da condensação dos conteineres. O ensaio feito com os conteineres protótipos testou duas alternativas: uma utilizando isolamento do conteiner com isopor, tentando criar um ambiente isotérmico, e a outra utilizando uma embalagem (tyvec) que tem barreira à água no estado liquido (não vapor). Ambas alternativas foram comparadas a uma situação rotineira de transporte. Este estudo mostrou que o uso do tyvec seria uma alternativa melhor que o uso de papel kraft ou o isopor, como barreira protetora contra a umidade formada nos conteineres durante o transporte

Abstract: The objectives of the present work were: 1) To study the influence of climatic conditions during transportation, for the development of A. ochraceus and ochratoxin production in coffee. 2) To obtain data under real coffee transport conditions and validate prototypes containers and 3) Propose prevention measures to avoid an increase in coffee moisture content inside the containers. Six containers (three commercial ones and three prototypes) were monitored during a shipment from Brazil to Italy. The containers were stowed in three different places (hold, below deck and deck) on the ship. Each prototype was located next to a conventional container. Temperatures, relative humidity, condensation and changes in moisture content, were monitored. The coffee container located below deck was less affected by variations (0.7%) in relation to the moisture content. Coffee located in the hold showed the highest variation in moisture content (3%). This container showed visible condensation. Coffee transported on the deck had an intermediary moisture variation (2%) and there was no visible condensation. The coffee moisture content in the prototype containers varied in a similar way to that in the commercial ones. There was an increase in ochratoxin A production with an increase in coffee moisture content. The transport simulation trial studied alternatives to prevent container condensation. Two packaging alternatives were tested in prototype containers: one using polystyrene to give an isothermic environment, and another using tyvec package film which provides a water barrier. Both alternatives were compared in a routine transport situation. This study showed that the tyvec film would be a better alternative than kraft paper or polystyrene as a barrier against the humidity formed inside the containers during transportation
