Масс-спектрометрическое исследование самоассоциации кофеина и возможности его комплексообразования с тритерпеновыми гликозидами

Abstract

Методом масс-спектрометрии исследована самоассоциация кофеина. Установлено, что ассоциаты состоят из тримеров и гексамеров кофеина. Рассмотрена возможность комплексообразования кофеина с тритерпеновыми гликозидами 3-О-α-L-рамнопиранозил-(1→2)-О-α-L-арабинопиранозидом хедерагенина и его 28-О-α-L-рамнопиранозил-(1→4)-О-β-D-глюкопиранозил-(1→6)-О-β-D-глюкопиранозиловым эфиром. В условиях проведенных экспериментов соединения включения не образуются и найдены только самоассоциаты кофеина и гликозидов.
