Abstract

O Cerrado do Oeste baiano abriga diversas especies frutiferas, a exemplo do araticum ( Annona crassiflora Mart.). Porem, o avanco de atividades agricolas na regiao, em prol do cultivo de soja, principalmente, tem acarretado a destruicao desse importante pedaco do bioma, podendo levar o araticum e outras especies a extincao. Na tentativa de divulgar o araticum do Oeste da Bahia para a populacao e comunidade cientifica, buscando sua valorizacao, objetivou-se determinar o seu perfil fisico-quimico. Para isso, foram avaliados os parâmetros: Peso dos frutos, Rendimento da polpa, Quantidade de sementes, Atividade de agua (Aw), pH, Acidez em acido citrico (AT), Solidos Soluveis Totais (SST), Cinzas, Razao SST/AT e Umidade (b.u.). Os resultados demonstraram que a polpa de araticum do Oeste baiano e composta predominantemente por agua, representando 80,18 ± 2,44% da polpa. As analises tambem evidenciaram que o araticum do Oeste da Bahia e acido e possui quantidade baixa de acucares quando observados valores encontrados por estudos com araticuns de outras regioes, podendo o congelamento nao ter impedido a perda de parte dos Solidos Soluveis do fruto. O araticum do Oeste da Bahia possui alguns aspectos fisico-quimicos similares a mesma especie de outras regioes, como: Peso, Rendimento da polpa, Quantidade de sementes, Atividade de agua e Umidade, enquanto que outros parâmetros mostraram-se diferentes, sendo estes: pH, Acidez em acido citrico, Solidos Soluveis Totais, Cinzas e Razao SST/AT.
