Abstract

Учебное пособие разработано в соответствии с действующими в СПбПУ образовательными стандартами и предназначено для студентов, Ð¾Ð±ÑƒÑ‡Ð°ÑŽÑ‰Ð¸Ñ ÑÑ по направлениям подготовки 19.03.04, 19.04.04 Â«Ð¢ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ñ продукции и организация общественного питания» и 19.04.05 Â«Ð’Ñ‹ÑÐ¾ÐºÐ¾Ñ‚ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ñ‡Ð½Ñ‹Ðµ производства Ð¿Ð¸Ñ‰ÐµÐ²Ñ‹Ñ Ð¿Ñ€Ð¾Ð´ÑƒÐºÑ‚Ð¾Ð² функционального и специализированного назначения». Ð’ учебном пособии представлена классификация оборудования предприятий общественного питания, приведены основные понятия о Ñ‚ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ñ‡ÐµÑÐºÐ¸Ñ Ð¼Ð°ÑˆÐ¸Ð½Ð°Ñ , Ð¸Ñ ÐºÐ¾Ð½ÑÑ‚Ñ€ÑƒÐºÑ‚Ð¸Ð²Ð½Ñ‹Ðµ ÑÑ ÐµÐ¼Ñ‹ с описанием ÑÐ¾ÑÑ‚Ð°Ð²Ð»ÑÑŽÑ‰Ð¸Ñ Ð¼ÐµÑ Ð°Ð½Ð¸Ð·Ð¼Ð¾Ð² и устройств, объяснены принципы действия машин и процессы, Ð¿Ñ€Ð¾Ð¸ÑÑ Ð¾Ð´ÑÑ‰Ð¸Ðµ при Ð¼ÐµÑ Ð°Ð½Ð¸Ñ‡ÐµÑÐºÐ¾Ð¹ обработке пищевого сырья.
