Se cuantificó el contenido de veinte metales (Al, B, Ba, Ca, Cd, Co, Cr, Cu, Fe, K, Li, Mg, Mn, Mo, Na, Ni, Pb, Sr, V y Zn) en sesenta muestras de yogures veganos, mediante espectrometría de emisión óptica de plasma acoplado inductivamente (ICP-OES). Las concentraciones medias en mg/kg de peso húmedo fueron: 0.993 (Al), 0.598 (B), 0.251 (Ba), 521.954 (Ca), 0.005 (Cd), 0.003 (Co), 0.053 (Cr), 0.902 (Cu), 3.227 (Fe), 764.014 (K), 0.181 (Li), 103.147 (Mg), 1.754 (Mn), 0.126 (Mo), 289.729 (Na), 0.020 (Pb), 0.152 (Ni), 0.425 (Sr), 0.015 (V) and 2.088 (Zn). Por un lado, el consumo diario de yogur en la población vegana en Canarias (42.1 g/día) contribuye a la ingesta recomendada de macroelementos y elementos traza, principalmente de Ca y Mn. Por otro lado, los metales tóxicos presentes en los yogures no suponen un riesgo toxicológico para la salud de los consumidores.
The concentration of twenty macro and trace elements (Al, B, Ba, Ca, Cd, Co, Cr, Cu, Fe, K, Li, Mg, Mn, Mo, Na, Ni, Pb, Sr, V y Zn) were quantified by inductively coupled plasma optical emission spectrometry (ICP-OES) in sixty samples of vegan yogurt. Mean concentrations in mg/kg wet weight were: 0.993 (Al), 0.598 (B), 0.251 (Ba), 521.954 (Ca), 0.005 (Cd), 0.003 (Co), 0.053 (Cr), 0.902 (Cu), 3.227 (Fe), 764.014 (K), 0.181 (Li), 103.147 (Mg), 1.754 (Mn), 0.126 (Mo), 289.729 (Na), 0.020 (Pb), 0.152 (Ni), 0.425 (Sr), 0.015 (V) and 2.088 (Zn). On the one hand, daily consumption of yogurt in Canarian vegan population (42.1 g/adult/day) contributes to the dietary intake of macroelements and trace elements, mainly Ca and Mn. On the other hand, the levels of metals detected did not reveal any toxicological risk for consumers
