La conducta alimentaria

Abstract

Desde el punto de vista biológico, el hombre puede sobrevivir como consecuencia de su relación con su entorno. Dentro de esta relación se encuentra la “conducta alimentaria”, es decir, las pautas que le permiten obtener los alimentos necesarios para mantener la integridad de su estructura corporal. En esta conducta alimentaria se distinguen básicamente dos procesos, el preparatorio o de obtención del alimento (cazar, pescar o recolectar) y el culminante o de ingesta del alimento (comer). Ahora bien, el que una sustancia o producto se coma depende de múltiples factores. Así pues, hay que distinguir entre lo que es “producto comestible” y “alimento” propiamente dicho. El primero alude a los productos de diferente origen (mineral, vegetal o animal) que son susceptibles de ser ingeridos por el hombre y que podrían satisfacer sus necesidades nutricionales. El segundo se refiere a los productos comestibles que, por diferentes razones, el hombre ha ido seleccionando progresivamente hasta integrarlos en su dieta. Por otro lado, y a diferencia de los animales, puede considerarse que la conducta alimentaria del hombre está estructurada en torno a dos factores estrechamente relacionados entre sí: uno de tipo psicofisiológico y otro antropológico. El factor psicofisiológico de la conducta alimentaria humana es objeto de continuas investigaciones, no sólo para conocer sus fundamentos o sus implicaciones clínicas, sino también para desarrollar procedimientos destinados a utilizar los sentidos humanos como un instrumento más en los laboratorios de investigación y en las unidades de control de calidad de la industria.
