Abstract

La mayor parte de la literatura académica e institucional afirma que la principal razón que explica el desperdicio de alimentos en la producción agraria son las deficiencias tecnológicas y logísticas (Parfitt, Barthel y Macnaughton, 2010). Cuando se concreta con mayor detalle, aparecen como causas la escasa coordinación entre los agentes de la cadena agroalimentaria (Muriana, 2017; Arias Bustos y Moors, 2018), la falta de inversión en tecnología adecuada que reduzca las pérdidas de la manipulación y procesamiento (Raak et al, 2017; Corradini, 2018), o unas fincas que mantienen sistemas de producción anacrónicas (Artiuch y Kornstein, 2012; Lanfranchi, Giannetto y Pascale, 2014). Este discurso, que podríamos llamar “tecnicista”, ha sido defendido por la FAO desde su primer informe sobre desperdicio alimentario, Global food losses and food waste (Gustavsson, Cederberg y Sonesson, 2011). Según este documento y en base a esa lógica, en los países con altos ingresos el desperdicio alimentario se debe especialmente a la conducta del consumidor y a la falta de coordinación entre minoristas, pero su agricultura más avanzada tecnológicamente hace que la pérdida de alimentos sea escasa en la fase de producción. En cambio, las causas del desperdicio alimentario en los países de ingresos bajos se habrían de buscar en una agricultura y sistema de distribución arcaicas e ineficientes. La legitimidad que supone surgir del organismo de Naciones Unidas especializado en alimentación y agricultura convirtió este documento en un texto canónico y referente para los estudios sobre desperdicio alimentario.
