Abstract

En las últimas décadas el campesinado andino ha experimentado más transformaciones que en los cuatro siglos precedentes: cambios en la propiedad de la tierra, fuerte emigración a áreas urbanas y a la selva, mayor dependencia del mercado capitalista de bienes y de trabajo, creciente participación en la política nacional, acceso a nuevas fuentes de información, etcétera. Estas transformaciones también han afectado hábitos cotidianos de su vida doméstica, como la alimentación. El campesino actual ya no come lo que comía su padre o su abuelo. Muchos productos y platos han desapare­cido, o su consumo ha disminuido para dar paso a otros nuevos no autócto­nos, generalmente procedentes del mercado capitalista. El estudio de la alimentación andina desde un punto de vista social­ antropológico es un campo aún poco desarrollado. Pero las investigacio­nes realizadas están de acuerdo en remarcar este fuerte cambio en los pa­trones alimentarios campesinos; cambio que, afirman muchas, ha supuesto un empobrecimiento de la dieta.
