[spa] Este trabajo plantea investigar los cambios morfológicos de los granos de almidón en contextos culinarios, es decir cuando se cocinan. Para ello, se realizó una colección de referencia de granos de productos locales, para estudiarlos en crudo primero, y posteriormente someterlos a dos procesos de cocción distintos con el uso de dos reproducciones de cerámica medieval. El propósito es, por una parte, conocer qué lugar de la cerámica retiene mejor los almidones, y cómo los procesos culinarios afectan a la morfología de los granos, y por otra parte, profundizar sobre la dieta y las practicas culinarias de las clases bajas, ya que para la práctica culinaria se utilizaran habas, alimento poco común en la alimentación de las clases más altas.
[eng] With this project I propose to find out what happens with the morphology of starch grains during a culinary process, when these grains were cooked. To achieve this, we elaborate a reference collection of local products, to study them raw first, and then submit them to two different culinary processes within different reproductions of medieval pottery. The purpose of this research is, on the one hand, to know which place of the pot retains more starch grains, and how the culinary processes affect its structure and morphology, and on the other hand, to furnish evidences about the diet of the poor classes, since for the culinary practice Vicia faba will be used, unusual food in the diet of the highest classes.
