The biocide activity of ozone (O3) against insect Piophila casei, which infest the dry hams, has been evaluated. The ozone at concentration of 1 ppm (1.6 mg/m3) kills maggots, pupae after 10 min, acts as repellent and kills the adult insect after 6 h. So the use of ozone during the seasoning of dry hams could be a useful solution to eliminate infestant insects.
