Abstract

Le castagne non sono soltanto un simbolo della tradizione delle aree montane, ma rappresentano anche un alimento ricco di proprietà nutrizionali, che le rendono un importante valore aggiunto per la filiera castanicola. Per approfondire questi aspetti, nell'ambito del progetto ValOd'OC, è stato condotto uno studio dedicato alle caratteristiche nutrizionali, nutraceutiche e sensoriali di alcune tra le principali cultivar coltivate nell'area transfrontaliera italo-francese, integrato con le analisi merceologiche.
