Relaciones de humedad de equilibrio para café (Coffea arabica) de primera calidad en Costa Rica

Abstract

Se desarrollaron pruebas para determinar la relación de equilibrio higroscópico entre la humedad relativa del ambiente y el contenido de humedad de café pergamino y café oro de primera calidad procedentes de la zona de Grecia, Provincia de Alajuela. Las unidades experimentales fueron procesadas mediante dos métodos de ajuste de humedad: desorción (pérdida de humedad) y adsorción (ganancia de humedad). Las muestras, de humedad conocida, se colocaron en recipientes herméticamente cerrados, en donde alcanzaron el equilibrio higroscópico con el aire intersticial interior, luego de un período de reposo a temperatura constante. Una vez logrado el equilibrio, se determinó la humedad relativa del aire interior, correlacionándolo luego con la humedad de la muestra. Finalmente se determinaron modelos estadísticos de ajuste que describen en forma matemática la relación de equilibrio higroscópico para café pergamino y café oro de primera calidad, para las condiciones de temperatura estudiadas. Los modelos de mejor ajuste, en ambos casos, son de la forma y = ax3 +bx2+cx+d, los cuales son concordantes con los existentes para otros tipos de granos.
