Abstract

[Resumen] Los derroteros de la evolución son hermosamente inescrutables. Cada vez que alegramos el gusto con una comida picante nuestro organismo participa de una particular carambola evolutiva. La «idea» inicial era detener el avance de microorganismos. La capsaicina es un alcaloide que funciona bien como antifúngico y bactericida, razón por la que algunas plantas del género Capsicum se empeñaron en acumular esa molécula –y otros capsaicinoides– en los tejidos de sus frutos, sobre todo los que eran visitados por pulgones, insectos que facilitan la invasión por hongos.

[Resum] Els rumbs de l’evolució són bellament inescrutables. Cada vegada que alegrem el gust amb un menjar picant el nostre organisme participa d’una particular carambola evolutiva. La «idea» inicial era aturar l’avanç de microorganismes. La capsaïcina és un alcaloide que funciona bé com a antifúngic i bactericida, raó per la qual algunes plantes del gènere Capsicum es van obstinar a acumular aquesta molècula –i altres capsaïcinoides– en els teixits dels seus fruits, sobretot els que eren visitats per pugons, insectes que faciliten la invasió per fongs.
