Abstract

Manuale dedicato agli agricoltori che intendono avvicinarsi alla coltivazione di questo pseudocereale esotico, al momento largamente conosciuto in Italia soltanto attraverso le sue specie spontanee che infestano le nostre colture. L’amaranto da granella invece (Amaranthus cruentus L.), costituisce una concreta alternativa ad altre colture a ciclo primaverile-estivo anche per quelle aree non irrigue e non eccessivamente fertili. Anche grazie alla molteplicità di utilizzo della granella nel settore alimentare e non, oltre che all’ottimo valore commerciale sul mercato internazionale, superiore a qualsiasi altro cereale (ad esclusione del Teff), fanno intravedere ottime prospettive per l’introduzione di questa pianta nei nostri ordinamenti colturali. Il manuale, è frutto di quattro anni di ricerca e sperimentazione in campo condotta dal Dipartimento di Scienze delle Produzioni Agroalimentari e dell’Ambiente dell’Università di Firenze.
