Potentialities and limits of short supply-chains

Abstract

Negli ultimi anni le iniziative di filiera corta stanno registrando una crescente diffusione, ponendosi sempre più come alternativa alla filiera lunga, dominata da imprese e istituzioni accusate di imporre a produttori agricoli e consumatori modelli produttivi, commerciali, sociali, alimentari e ambientali negativi. In realtà il termine “filiera corta” comprende un’ampia tipologia di iniziative e diversi modelli operativi che suggeriscono cautela nell’operare questo tipo di valutazione. Obiettivo di questo lavoro è fornire una chiave di analisi delle potenzialità e dei limiti delle iniziative di “filiera corta” sulla base di tre dimensioni critiche: la logistica, la trasmissione dell’informazione, e la distribuzione del valore economico creato. Anche attraverso l’analisi di due casi di studio (il tema del prezzo giusto nei mercati contadini in Toscana, e la commercializzazione della carne di razze autoctone in provincia di Grosseto), viene evidenziato come non sempre le iniziative di filiera corta riescono a competere con la filiera lunga per quanto riguarda il raggiungimento di una maggiore compressione dei costi di produzione e di distribuzione. Tuttavia la valutazione della filiera corta andrebbe soprattutto operata in base alla sua capacità di raggiungere gli obiettivi che gli operatori si sono prefissati. In questo senso alcune iniziative di filiera corta mostrano superiori potenzialità rispetto alla filiera lunga.
