INSENSIBILIZAÇÃO PRÉ-ABATE EM PIRARUCU

Abstract

Atividades físicas intensas no pré- abate ou abate afetam a qualidade dos peixes, e estão entre os procedimentos mais críticos do manejo de criação. Este estudo avaliou dois métodos de insensibilização pré-abate, aplicados em pirarucu e seus efeitos sobre parâmetros de qualidade da carne. Pirarucus com peso médio de 2,38kg foram submetidos ao choque térmico (n=10) e percussão na cabeça (n=10), seguidos por corte de brânquias e sangria em água gelada, e conservados em gelo por até 168 horas. Em intervalos de tempos selecionados após o abate, foram determinados o pH, bases nitrogenadas voláteis (BNV), mudanças do comprimento e largura dos filés, textura muscular e cor instrumental. O pH não variou entre os métodos de insensibilização, mas apresentou ligeiro aumento após 7 dias de estocagem. Maiores valores de BNV foram obtidos nos peixes insensibilizados com a pancada na cabeça, e menores para textura muscular. O choque térmico provocou melhores valores de L (luminosidade) e menor porcentagem de contração da largura nos filés em até 24 horas após o abate. Embora a percussão na cabeça seja o método mais comumente utilizado para insensibilizar o pirarucu na despesca de peixes criados, a utilização de choque térmico proporciona filés com maior qualidade.
