Abstract

La ingesta de calcio (Ca), o de alimentos lácteos en general, es menor a la recomendada en gran parte de la población por diferentes razones (acceso, preferencia, tolerancia digestiva). Se desarrolló una bebida con aporte de Ca, a la que haremos referencia a lo largo de toda la tesis como BEBIDA, a base de cáscara de huevo, frutas cítricas y kéfir, para ofrecer una fuente alternativa de Ca. La mayor concentración de Ca se obtuvo incubando a 20 ºC y durante 72 h: 6 g de cáscara de huevo, 10 g de kéfir, 200 mL de jugo de naranja y 800 mL de agua. Con estas condiciones, la BEBIDA aporta en promedio 180 mg Ca/porción. La BEBIDA también se evaluó microbiológicamente para descartar la presencia de microorganismos patógenos. Además, experimentos realizados con saco del intestino delgado evertido en ratas demostraron que la absorción intestinal de Ca de la BEBIDA fue mayor que las soluciones controles. Finalmente, a pesar de tener un valor de pH ácido, la BEBIDA no demostró tener efecto desmineralizante sobre el esmalte dental. Esta tesis aporta una metodología para preparar a nivel doméstico un producto que podría contribuir a incrementar la ingesta diaria de Ca.
