Abstract

El despilfarro alimentario, supone un gran problema actual, a nivel económico, ambiental y social. En el 2011, la FAO notificó que más de 840 millones de personas actualmente sufren desnutrición, pero empleando las medidas preventivas necesarias y adecuadas, esta y otras causas a lo largo de la cadena alimentaria podrían solucionarse. El presente trabajo de fin de grado (TFG) pretende analizar el despilfarro alimentario en la restauración universitaria. El estudio se estructura en diferentes bloques: 1) Análisis del restaurante; 2) Estudiar diferentes métodos de cuantificación y escoger el más adecuado, acorde con la casuística; 3) Cuantificar el despilfarro generado durante una semana en el restaurante; 4) Analizar el comportamiento de los comensales, mediante intervenciones cómo carteles y cuestionarios. En los resultados obtenidos en el estudio, se muestra un interés bajo por disminuir el despilfarro alimentario, ya que a pesar de las intervenciones elaboradas, los comensales despilfarraron igual o más comida. Aunque, cabe destacar que algunos comensales reflejaron lo contrario. Esto conlleva a plantear una serie de medidas preventivas, no sólo en los comensales, sino por parte del restaurante también.

El malbaratament alimentari, suposa un gran problema actual, a nivell econòmic, ambiental i social. En el 2011, la FAO va notificar que més de 840 milions de persones actualment pateixen desnutrició, però emprant les mesures preventives necessàries i adients, aquesta i altres causes al llarg de la cadena alimentaria, podrien solucionar-se. El present treball de final de grau (TFG) pretén analitzar el malbaratament alimentari en la restauració universitària. L'estudi s'estructura en diferents blocs: 1) Analitzar el restaurant; 2) Estudiar diferents mètodes de quantificació i escollir el més adient, segons la casuística; 3) Quantificar el malbaratament generat durant una setmana en el restaurant; 4) Analitzar el comportament dels comensals, mitjançant intervencions com cartells i qüestionaris. En els resultats obtinguts en l'estudi, es mostra un interès baix per tal de disminuir el malbaratament alimentari, ja que malgrat les intervencions elaborades, els comensals van malbaratar igual o més menjar. Tot i que cal destacar, que alguns comensals van reflexa just el contrari. Això, comporta a plantejar una sèrie de mesures preventives, no sols en els comensals, sinó a més a més, per part del restaurant.

Food waste, is a major current problem, economic, environmental and social level. In 2011, FAO reported that more than 840 million people currently suffer from malnutrition, but using the necessary and adequate preventive measures, this, and other causes throughout the food chain could be addressed. The aim of the present work is to analyze the food waste in the university restoration. The study is divided in different sections: 1) Analysis of the restaurant; 2) Study different methods of quantification and choose the most suitable, according to situation; 3) Quantify the waste generated during a week in the restaurant; 4) Analyze the behavior of the diners, through interventions such as posters and questionnaires . The results obtained in the study, show low interest in reducing food waste, despite the elaborate interventions, diners squandered equally or more food. Although, it should be noted that some diners reflect otherwise. This leads to raise a number of preventive measures, not only the guests but by the restaurant as well.
