Abstract

This Bachelor’s Thesis addresses the design of a technological solution for the production of Ready-to-use therapeutic food (RUTF) in humanitarian emergencies, focusing on the Gaza Strip (Palestine). The main objective of this work is to develop a mobile micro-plant capable of producing a nutritionally adequate and safe therapeutic food, using local ingredients whenever possible. To achieve this objective, an analysis was conducted of the humanitarian context, the limitations on access to and production of food, and the nutritional guidelines established by organizations such as the World Health Organization. Based on this analysis, a therapeutic food called Samsam Plus was formulated, consisting primarily of tahini, roasted chickpea flour, powdered milk, and a vitamin and mineral premix, meeting the technical specifications of the RUTF. The work includes the design of a micro-plant integrated into an insulated container, encompassing equipment selection, definition of the production process, interior layout, and hygiene and food safety measures. Finally, the environmental, economic, and social sustainability implications of the project are analyzed, concluding that the proposal is viable and can contribute to improving access to therapeutic food in emergency situations.
