Digestión anaerobia de subproductos de la industria cárnica

Abstract

En los últimos años, el GIRO ha trabajado en diferentes líneas de investigación relativas a la digestión anaerobia de subproductos animales (SPA) de la industria cárnica. En el presente trabajo se sintetizan algunos resultados obtenidos, correspondientes a la caracterización de los SPA y su biodegradabilidad anaerobia, al análisis de la dependencia de ésta en función del pretratamiento térmico aplicado, al estudio de la dinámica de las proteínas y de los lípidos durante la digestión anaerobia, al estudio de los fenómenos de inhibición por ácidos grasos de cadena larga (AGCL) y del proceso de adaptación de los microorganismos, al estudio de estrategias de prevención o de recuperación de reactores inhibidos y al estudio de los rendimientos de la codigestión anaerobia de deyecciones ganaderas con SPA. Estos trabajos indican que debe tenderse a desarrollar nuevos diseños de reactores y/o nuevas estrategias de operación, a fin de superar las limitaciones debidas a inhibición por nitrógeno amoniacal y AGCL.
