Identificació i anàlisi dels lípids del cargol bover

Abstract

En aquest estudi s’ha fet un anàlisi dels lípids del cargol bover (helix aspersa) on destaquen per la seva abundància els àcids grassos i els esterols. S’ha trobat una gran quantitat d’àcids grassos essencials (omega 3) i de colesterol, on hi ha una competència en quant alimentació que actua directament a la salut cardiovascular. La ratio trobada omega-6/omega-3 es de 1,7 i la quantitat d’omega 3 total es 2,4 vegades major que la de colesterol.
