Diseño de un biorreactor para la fabricación de la cerveza

Abstract

El objetivo de este proyecto es el de diseñar un biorreactor donde se lleve a cabo la fermentación alcohólica para la fabricación de una cerveza Lager a partir de un microorganismo denominado Saccharomyces. Primero de todo, se realizará un estudio de la fermentación y se analizarán las diferentes opciones de diseño del proceso. Posteriormente, se seleccionará el mejor el tipo de biorreactor y sus condiciones de operación para obtener el producto deseado. Para ello, se determinara su dimensionado en base a unos objetivos de producción establecidos a lo largo del proyecto. Una vez definido el equipo se establecerán los materiales de construcción y se usará el modelo matemático de Monod para realizar una simulación numérica que defina los parámetros importantes del proceso y la potencia de agitación necesaria. Una vez calculado el balance de masa del sistema, se procederá a dimensionar la superficie de transmisión de calor. Finalmente, se realizará un estudio económico del proyecto así como del impacto ambiental que pueda tener el proyecto sobre el medio ambiente.
