Caracterización y determinacion de polifenoles del vino

Abstract

La presente memoria forma parte de un estudio que se esta realizando en la Universidad de Barcelona dentro del departamento de Quimiometría. Su finalidad consiste en el estudio de los pKa’s de polifenoles que se encuentran en el vino. El proyecto se ha llevado a cabo mediante valoraciones espectrofotométricas ácido-base en soluciones acuosas de 11 polifenoles: Catequina, Epicatequina, Quercetina, Ácido Siríngico, Ácido Cumárico, Ácido Felúrico, Ácido Vanílico, Ácido Gálico, 3,4 Dihidroxibenzoico, Ácido Cafeico, 4-Hidroxibenzoico. Previamente, se ha realizado un trabajo de búsqueda de información sobre su composición y posibles pKa’s que podía tener cada compuesto. Finalmente, se ha realizado la parte experimental del proyecto determinando los distintos valores de pKa que presentan.
