Estudi de la capacitat antioxidant del te blanc amb vitamina E i vitamina A

Abstract

La oxidació dels lípids és una de les principals formes de deteriorament dels aliments. Per evitar l’oxidació s’han afegit antioxidants com les vitamines A, E, Trolox, entre d’altres. El te blanc és originari de la Xina, i era reservat per als emperadors d’aquest país. Només es recull a la primavera, i aquest està format per uns brots amb uns pels blancs, d’on prové el seu nom. Diversos estudis han confirmat que el té conté una gran quantitat de polifenols, els quals actuen contra l’envelliment cel·lular, combat la fatiga, la caries, etc. Les vitamines A i E, i també el Trolox, són uns forts antioxidants, els quals combaten l’estrès oxidatiu, l’envelliment i algunes malalties com l’anèmia i el càncer, encara que una sobredosis d’aquests pot causar un efecte contrari a l’estimat. L’objectiu d’aquest treball és analitzar mitjançant els estudis pertinents, la quantitat dels polifenols que s’extreuen del té amb un seguit d’extraccions, avaluar l’evolució primària i secundària d’emulsions d’oli en aigua que contenen vitamines A, E i Trolox i infusió de té blanc, com la combaten i determinar quines concentracions serien necessàries.
